CABBAGE & OTHER SIMPLE COMFORTS

We were nervous about what the weather would bring for today (we saw everything from snow to thunder in the forecast), so Mark and Blake did a nice big harvest of Cabbage from our southernmost fields over the weekend. As it turned out, today has been a clear and gorgeous January day. You're welcome! Let's hope we're still this lucky in the coming weeks.

This week's offerings are quintessentially Winter. Cabbages, Fingerling Potatoes, Leeks and Rutabagas are solid Winter staples, and they push those comfort food buttons in a big way with minimal effort. I love my and squash, but it took viewing them through a weeknight lens to make things official. Pies and long drawn out recipes are great for special occasions and weekends, but I can't keep up with that kind of pressure Monday-Friday. This is what we love about soup and slaws, right? Make a big pot or bowl one day and munch on it all week. Anything to make eating vegetables easier. Delicata Squash, aka "The Lazy Person's Winter Squash," halved and cut into quarter inch rings skins and all, disappears into our hungry bellies pretty quickly when roasted up like a pan of oven fries after a long day of juggling farmwork (and now schoolwork) around here. And as of late, my mom can't get enough of Cabbage Steaks. They've been the topic of many a phone call and text thread. Sheetpans of vegetables are handy for sides and salads, and if you're stumped about how you're going to get yourself or anyone else in your house to eat Rutabaga, Root Vegetable Tacos are a shockingly good bet. You'll have to trust me and try that one for yourself!
